- Prepare beans to package instructions, steps 1 and 2.
- While beans are simmering, sauté onion, garlic, corn, and spices in olive oil until tender. Let cool.
- Drain beans well. Let cool.
- Preheat oven to 400 F.
- In a large bowl, mash beans until almost smooth. Fold in veggie mixture, breadcrumbs, and cornstarch.
- Scoop bean mixture into 1-ounce balls, and place into lined mini muffin tin.
- Bake for 15 to 20 minutes, or until outer edges are crisp and brown.
- Serve with your favorite burger condiments.
