Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp cayenne pepper
  • 1 tsp baking powder
  • 1 1/2 cup flour
  • 1/4 cup mango juice
  • 1 1/2 cup WBP Chili Spiced Mango, finely chopped

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Line a muffin pan with paper holders.
  2. Whisk together flour, baking powder, cinnamon, and cayenne. Set aside.
  3. Cream butter and sugar in a large bowl until light and fluffy. Beat in eggs one at a time. Beat in vanilla.
  4. Fold dry ingredients into the wet until just blended, then add in mango juice and mix well. Fold in chili spiced mango.
  5. Pour batter into muffin cups and bake for 20-25 minutes, or until a toothpick comes out clean.
  6. Let the muffins cool for at least 30 minutes in the pan before serving.
