- Spread yogurt onto a parchment lined baking sheet into an even layer, about half inch thick.
- Sprinkle espresso beans, trail mix, and fruit over the yogurt, pressing them down gently until an even layer is created.
- Freeze for about 4 hours, or until yogurt is hardened completely.
- Break into pieces and serve immediately. Store any leftovers in an airtight container in the freezer.
