Gluten-Free Cornbread Recipe

Our Gluten-Free Cornbread is definitely a customer favorite. Enjoy it as is, or if you’re feeling adventurous, add a diced jalapeno and some jack cheese. If you’re in the mood for something on the sweeter side, drizzle a little honey on top and add a dash of cinnamon. It also makes a wonderful companion to a steaming cup of soup or chili. Made in a gluten-free environment.

  • 1 package Gluten Free Cornbread Mix
  • 2 eggs
  • 2 tbsp butter melted
  • 1 1/3 cup milk
  • 1/4 cup vegetable oil

Instructions

  1. Preheat oven to 400 degrees.
  2. Pour the cornbread mix into a medium bowl.
  3. In a small bowl, combine 2 eggs, 2 tablespoons of melted butter, 1 1/3 cups of milk and 1/4 cup of cooking oil.
  4. Add liquid mixture to dry mix.
  5. Stir until just moistened. (Batter will be thin).
  6. Grease 9 inch square pan.
  7. Pour batter into greased 9 inch square pan.
  8. Bake for about 20-25 minutes.
  9. Check frequently to see if done by sticking a toothpick in. Once toothpick comes out clean, cornbread is done.
  10. Baking times may vary.

Recipe Notes

Ingredients: Yellow cornmeal, brown rice flour, potato starch sugar, tapioca starch, baking powder (sodium acid pyrophosphate, bicarbonate soda, corn starch, monocalcium phosphate), salt.
