  • 1 tin WBP garlic & herb spice blend
  • 4 pounds russet potatoes, peeled and quartered
  • 1 cup full-fat canned coconut milk
  • 1 cup almond or soy milk, unsweetened
  • 1 bunch chives, finely chopped
  • additional kosher salt, to taste

Vegan Garlic Mashed Potatoes

Instructions

  1. Add the potatoes to a large pot and cover completely with water. Bring to a boil and continue to cook until the potatoes are fork-tender, about 10 – 15 minutes. Remove from heat and drain the water off of the potatoes.
  2. While the potatoes boil, combine both milks and spice blend in a medium saucepan. Bring to a simmer and cook for 10 minutes until fragrant and the garlic in the spice blend is rehydrated.
  3. Pour about half of the garlic milk mixture over the potatoes and use a potato masher or two forks to mash the potatoes. Add more of the garlic milk mixture until you reach your desired consistency.
  4. Season with additional salt to taste. Garnish with chives and serve.
