- Add the potatoes to a large pot and cover completely with water. Bring to a boil and continue to cook until the potatoes are fork-tender, about 10 – 15 minutes. Remove from heat and drain the water off of the potatoes.
- While the potatoes boil, combine both milks and spice blend in a medium saucepan. Bring to a simmer and cook for 10 minutes until fragrant and the garlic in the spice blend is rehydrated.
- Pour about half of the garlic milk mixture over the potatoes and use a potato masher or two forks to mash the potatoes. Add more of the garlic milk mixture until you reach your desired consistency.
- Season with additional salt to taste. Garnish with chives and serve.
